Miso Soup

1 dried shiitake, soaked and thinly sliced
2 cups water
1-2 inch piece of wakame, rinsed and sliced
¼ cup turnips cut into matchsticks
¼ cup onion, cut into half-moons
½ cup bokchoy, finely chopped
1-2 flat teaspoons of miso, diluted in a little soup liquid
Minced scallions for garnish

Bring water to a boil; add the shiitake, wakame and soaking liquids. Simmer for 3-4 minutes. Add the onion, simmer 2-3 min. Add the turnip and simmer 3-4 min. Add diluted miso to the soup with bokchoy. Garnish with scallions.
